1 Oven
1 Wire cooling rack
1 Knife or bench scraper (for cutting bars)
1 Airtight container (for storage)
- 2 Cups Old-fashioned oats
- ½ Cup Almond milk (or any milk of your choice)
- ¼ Cup Honey or maple syrup
- 2 Large eggs
- ¼ Cup Melted coconut oil or butter
- 1 Tsp Vanilla extract
- 1 Tsp Baking powder
- ½ Tsp Ground cinnamon
- ¼ Tsp Salt
Optional Add-Ins:
- ½ Cup Chopped nuts (e.g., almonds, walnuts)
- ½ Cup Dried fruit (e.g., cranberries, raisins)
- ¼ Cup Chocolate chips
- 1 Mashed banana for extra moisture and sweetness
Substitutions
- You can substitute almond milk with any plant-based or dairy milk.
- Maple syrup can replace honey for a different flavor profile.
Add-ons Variations:
- Feel free to mix and match add-ins according to your preference. The nuts add a nice crunch, while the dried fruits and chocolate chips provide sweetness.
Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.
In a large mixing bowl, combine the old-fashioned oats, baking powder, ground cinnamon, and salt. Stir until evenly mixed.
Step 2: Mix Wet Ingredients
In a separate bowl, whisk together the eggs, almond milk, honey (or maple syrup), melted coconut oil (or butter), and vanilla extract. Ensure the coconut oil is not too hot to avoid cooking the eggs.
Step 3: Combine Ingredients
Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well combined. If using add-ins like nuts, dried fruit, or chocolate chips, fold them into the mixture now.
For extra moisture and natural sweetness, you can also mix in a mashed banana at this stage.
Step 4: Bake
Spread the mixture evenly in the prepared baking pan. Smooth the top with a spatula.
Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Step 5: Cool and Cut
Allow the baked oatmeal to cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.
Once cooled, cut into bars. Store in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week.
