Ingredients

  • 2 Medium sweet potatoes, peeled and diced
  • 1 Lb Breakfast sausage , crumbled
  • 1 Red bell pepper, diced
  • 1 Green bell pepper, diced
  • 1 Small onion, diced
  • 3 Garlic cloves, minced
  • 1 Tsp Smoked paprika
  • 1/2 Tsp Ground cumin
  • Salt and pepper to taste
  • 4 Large eggs
  • 2 Tbsp Olive oil
  • Fresh parsley, chopped, for garnish

Instructions

  • Prepare the Ingredients:
    Start by peeling and dicing the sweet potatoes. Microwave them for 3-4 minutes to soften. This step ensures they cook evenly and quickly in the skillet.
  • Cook the Sausage:
    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the crumbled sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  • Sauté the Vegetables:
    In the same skillet, add another tablespoon of olive oil. Add the diced onions and bell peppers. Cook until they begin to soften, about 5 minutes. Stir in the minced garlic and cook for another minute.
  • Add the Sweet Potatoes:
    Add the microwaved sweet potatoes to the skillet. Sprinkle with smoked paprika, ground cumin, salt, and pepper. Cook, stirring occasionally, until the sweet potatoes are tender and slightly crispy, about 10 minutes.
  • Combine and Cook:
    Return the cooked sausage to the skillet. Stir to combine everything evenly. Create four small wells in the mixture and crack an egg into each well.
  • Cook the Eggs:
    Cover the skillet with a lid and cook until the eggs are done to your liking. For runny yolks, cook for about 5 minutes. For firmer yolks, cook a bit longer. And Yes of course, you can do scrambled if you prefer!
  • Garnish and Serve:
    Remove the skillet from the heat. Garnish with freshly chopped parsley. Serve hot and enjoy!

Notes

You can prep the sausage and sweet potato mixture up to 3 days in advance and store it in an airtight container in the fridge. Reheat in a skillet or microwave and add fresh eggs just before serving. Leftovers (without eggs) will keep in the fridge for up to 4 days or can be frozen for up to 2 months.
