Ingredients

  • 2 Large cucumbers, peeled and roughly chopped
  • 1 Cup Freshly squeezed lemon juice (about 4-6 lemons)
  • 1 Cup Sugar, or to taste
  • 4 Cups Cold water
  • Ice cubes
  • Fresh mint leaves for garnish (optional)
  • Thinly sliced cucumber and lemon wheels for garnish

Instructions

  • Prepare the Cucumber Juice:
    Place the chopped cucumbers in a blender and puree until smooth. Strain the mixture through a fine mesh sieve into a bowl, pressing with a spoon to extract as much juice as possible. Discard the solids.
  • Make the Lemonade Base:
    In a large pitcher, combine the freshly squeezed lemon juice and sugar. Stir until the sugar has completely dissolved.
  • Combine and Chill:
    Add the cucumber juice and cold water to the pitcher. Stir well to combine all the ingredients. Taste and adjust the sweetness or lemon intensity as needed.
  • Serve:
    Fill glasses with ice cubes, pour the cucumber lemonade over the ice, and garnish with fresh mint leaves, cucumber slices, and lemon wheels.
