For the Shrimp Scampi:
- 1 pound large shrimp peeled and deveined
- 8 ounces linguine or spaghetti or zucchini noodles for a low-carb option
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 5 cloves garlic minced
- ½ teaspoon red pepper flakes optional for heat
- ½ cup dry white wine such as Sauvignon Blanc or Pinot Grigio
- 1 lemon juiced and zested
- ¼ cup fresh parsley chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan cheese for serving

Step 1: Cook the Pasta
Bring a large pot of salted water to a boil.
Cook linguine or spaghetti according to package instructions until al dente.
Before draining, reserve ½ cup of pasta water to help thicken the sauce later.
Drain and set aside.
Step 2: Sauté the Shrimp
Heat 1 tablespoon olive oil and 1 tablespoon butter in a large pan over medium-high heat.
Add shrimp in a single layer, seasoning with salt and pepper.
Cook for about 1-2 minutes per side until the shrimp turn pink and opaque.
Remove shrimp from the pan and set aside.
Step 3: Make the Garlic Butter Sauce
In the same pan, add remaining butter and olive oil.
Sauté garlic and red pepper flakes for 30 seconds until fragrant.
Pour in white wine and lemon juice, scraping up browned bits from the pan.
Let it simmer for about 2-3 minutes to reduce slightly.
Stir in the lemon zest and fresh parsley.
Step 4: Toss Everything Together
Add cooked pasta to the pan, tossing it in the garlicky butter sauce.
If needed, add a bit of reserved pasta water to loosen the sauce.
Return shrimp to the pan, stirring gently to coat everything in the sauce.
Taste and adjust seasoning if necessary.
Step 5: Serve and Enjoy!
Plate the shrimp scampi and sprinkle with Parmesan cheese.
Garnish with fresh parsley, red pepper flakes, and lemon wedges.
