  • 4 Lbs Pork ribs (baby back or spare ribs)
  • 1 Tbsp Olive oil
  • 1 Tsp Salt
  • 1 Tsp Black pepper
  • 1 Tsp Garlic powder
  • 1 Tsp Onion powder
  • 1 Tsp paprika
  • 1/2 Tsp Cayenne pepper (optional, for a bit of heat)
  • 1 Cup BBQ sauce (store-bought or homemade)
  • 1/4 Cup Apple cider vinegar
  • 1/4 Cup Apple juice

Instructions
 

  • Prepare the Ribs:
    Start by removing the membrane from the back of the ribs. This ensures that your ribs are tender and allows the flavors to penetrate better.
    Rinse the ribs under cold water and pat them dry with paper towels.
  • Apply the Rub:
    In a small bowl, combine the salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
    Rub the olive oil all over the ribs, then generously coat them with the spice mixture, making sure to cover both sides.
  • Marinate:
    For the best flavor, let the ribs marinate in the fridge for at least 2 hours, or overnight if possible.
  • Preheat the Grill:
    Set up your grill for indirect cooking by lighting one side and leaving the other side off. Aim for a temperature of around 275°F (135°C).
  • Cook the Ribs:
    Place the ribs on the cooler side of the grill, bone side down. Close the lid and let them cook for about 2.5 to 3 hours, maintaining a steady temperature.
    Every hour, spritz the ribs with a mixture of apple cider vinegar and apple juice to keep them moist and add a hint of sweetness.
  • Glaze with BBQ Sauce:
    During the last 30 minutes of cooking, brush the ribs with BBQ sauce. Flip them over and brush the other side as well. This will create a beautiful, sticky glaze.
  • Finish and Serve:
    Once the ribs are done, remove them from the grill and let them rest for about 10 minutes before cutting. This helps the juices redistribute, making them even more tender.
