Ingredients

  • 2 Chicken breasts, boneless, skinless
  • 2 Zucchini, medium-sized, sliced into rounds
  • 1 Cup Cherry tomatoes
  • 4 Cups Mixed greens (spinach, arugula, and kale)
  • 1 Small red onion, thinly sliced
  • 1/2 Cup Feta cheese, crumbled
  • 3 Tbsp Olive oil (for grilling and dressing)
  • 2 Tbsp Lemon juice (freshly squeezed)
  • 1 Tsp Dijon mustard
  • 2 Cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 Cup Fresh herbs (basil, parsley, or cilantro), chopped

Instructions

  • Preheat and Prepare:
    Preheat your grill to medium-high heat. Brush the grill grates with a little olive oil to prevent sticking.
    While the grill is heating, season the chicken breasts with salt and pepper. Drizzle a tablespoon of olive oil over the zucchini slices and season with salt and pepper.
  • Grill the Chicken and Zucchini:
    Place the chicken breasts on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F.
    Add the zucchini slices to the grill during the last 5 minutes of the chicken cooking time. Grill until tender and slightly charred, about 2-3 minutes per side.
  • Prepare the Dressing:
    In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, Dijon mustard, minced garlic, and a pinch of salt and pepper until well combined.
  • Assemble the Salad:
    In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, and crumbled feta cheese.
    Once the chicken and zucchini are done grilling, let the chicken rest for a few minutes before slicing it into thin strips.
    Add the grilled chicken strips and zucchini to the salad bowl. Drizzle the dressing over the top and toss gently to combine.
