Ingredients
  

For the Salad:

  • 2 Boneless, skinless chicken breasts
  • 1 Tbsp Olive oil
  • Salt and pepper to taste
  • 1 Large head of Romaine lettuce, chopped
  • 1 Cup Cherry tomatoes, halved
  • ¼ Cup Shaved Parmesan cheese
  • ½ Cup Croutons (optional)

For the Caesar Dressing:

  • ½ Cup mayonnaise
  • ¼ Cup Grated Parmesan cheese
  • 2 Tbsp Lemon juice
  • 2 Tsp Dijon mustard
  • 1 Tsp Worcestershire sauce
  • 2 Cloves garlic, minced
  • Salt and pepper to taste
  • 2-3 Tbsp Water (to thin, if necessary)

Instructions
 

Prepare the Chicken:

  • Preheat your grill to medium-high heat.
  • Rub the chicken breasts with olive oil, and season with salt and pepper.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked and no longer pink inside.
  • Remove from the grill and let it rest for a few minutes before slicing it into thin strips.

Make the Dressing:

  • In a medium bowl, combine the mayonnaise, grated Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and pepper.
  • Whisk until smooth and creamy. If the dressing is too thick, add water one tablespoon at a time until you reach your desired consistency.

Assemble the Salad:

  • In a large salad bowl, add the chopped Romaine lettuce and cherry tomatoes.
  • Drizzle with the Caesar dressing and toss until the greens are evenly coated.
  • Top with the sliced grilled chicken, shaved Parmesan, and croutons if using.
