Equipment
Grill or Grill Pan: For achieving that smoky, seared flavor — works with gas, charcoal, or stovetop grill pans.
Meat Thermometer: To ensure your steak reaches the perfect internal temperature without overcooking.
Sharp Chef’s Knife: Essential for slicing steak against the grain and chopping fresh herbs for the chimichurri.
Cutting Board with Juice Groove: Keeps your prep area clean while carving juicy steak.
Food Processor or Mini Chopper: Optional, but handy for quickly blending the chimichurri sauce ingredients.
Ingredients
For the steak:
2LbsRibeye or sirloin streak
2TbspOlive oil
Salt and pepper to taste
For the chimichurri sauce:
1CupFresh parsley, finely chopped
1/4CupFresh cilantro, finely chopped
1/2CupOlive oil
1/4Cup Red wine vinegar
3Cloves garlic, minced
1TspSalt
1/2Tsp Black pepper
1/2TspRed pepper flakes
Instructions
Prepare the Chimichurri:In a bowl, combine parsley, cilantro, olive oil, red wine vinegar, garlic, salt, black pepper, and red pepper flakes. Whisk until well blended. Let the sauce sit for at least 10 minutes to let the flavors meld together. This can also be made a day ahead and refrigerated to enhance the flavors.
Prep the Steak:Pat the steak dry with paper towels. This ensures you get a nice sear. Rub each steak with olive oil and generously season both sides with salt and pepper.
Grill the Steak:Preheat your grill to high heat. Place steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or longer depending on your preferred level of doneness.Remove the steaks from the grill and let them rest for at least 5 minutes. This helps the juices redistribute throughout the meat, making your steak juicier and more flavorful.
Serve:Slice the steaks against the grain and drizzle generously with the chimichurri sauce. Serve immediately.
