Ingredients
  

  • 2 Cups Leftover BBQ meat (brisket, pulled pork, or chicken), shredded
  • 1 Cup Leftover BBQ vegetables (peppers, onions, corn), chopped
  • 6 Large Eggs
  • ¼ Cup Milk
  • 1 Cup Shredded cheese (cheddar or Monterey Jack)
  • 4 Large Flour Tortillas
  • ¼ Cup BBQ Sauce
  • ¼ Cup Salsa
  • 1 Avocado sliced
  • Salt and pepper to taste
  • 1 Tbsp Olive oil
  • Optional toppings Sour cream, chopped cilantro, hot sauce

Instructions
 

  • Prepare the Eggs: In a large bowl, whisk together the eggs, milk, salt, and pepper. Heat olive oil in a large skillet over medium heat. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and fully cooked. Remove from heat and set aside.
  • Reheat the BBQ Meat and Vegetables: In the same skillet, add the leftover BBQ meat and vegetables. Cook over medium heat until heated through, about 5 minutes.

Assemble the Burritos:

  • Lay a tortilla flat on a clean surface.
  • Spread a tablespoon of BBQ sauce in the center of the tortilla.
  • Add a generous portion of scrambled eggs, followed by the heated BBQ meat and vegetables.
  • Sprinkle with shredded cheese.
  • Top with a few slices of avocado and a spoonful of salsa.
  • Fold the Burritos: Fold in the sides of the tortilla, then roll it up from the bottom to the top, ensuring all the fillings are securely tucked inside. Repeat with the remaining tortillas.
  • Heat the Burritos: In a clean skillet over medium heat, place the burritos seam-side down. Cook until the tortillas are golden brown and crispy, about 2-3 minutes per side.
