Ingredients

For the Pancakes:

  • 2 Cups All-purpose flour
  • 2 Tbsp Sugar
  • 2 Tsp Baking powder
  • 1 Tsp Baking soda
  • 1/2 Tsp Salt
  • 2 Cups Buttermilk
  • 2 Large eggs
  • 1/4 Cup Melted butter
  • 1 Tsp Vanilla extract
  • Red and blue food coloring
  • 1 Cup Fresh blueberries
  • 1 Cup Fresh strawberries, diced

For the Toppings:

  • Fresh whipped cream
  • Additional fresh blueberries and strawberries
  • Maple syrup

Instructions

  • Step 1: Prepare the Batter
    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    In another bowl, mix the buttermilk, eggs, melted butter, and vanilla extract until well combined.
    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.
  • Step 2: Divide and Color the Batter
    Divide the batter evenly into three bowls.
    In the first bowl, add a few drops of red food coloring and mix until the color is evenly distributed.
    In the second bowl, add a few drops of blue food coloring and mix well.
    Leave the third bowl of batter plain.
  • Step 3: Cook the Pancakes
    Heat a griddle or large skillet over medium heat and lightly grease with butter or cooking spray.
    Pour 1/4 cup of batter onto the griddle for each pancake.
    Sprinkle a few blueberries onto the blue pancakes and a few diced strawberries onto the red pancakes.
    Cook until bubbles form on the surface of the pancakes, then flip and cook until golden brown on both sides.
  • Step 4: Assemble and Serve
    Stack the pancakes on a plate, alternating colors for a festive look.
    Top with a generous dollop of fresh whipped cream.
    Garnish with additional fresh blueberries and strawberries.
    Drizzle with maple syrup before serving.

Notes

Make Ahead:
You can prepare the pancake batter the night before and store it covered in the fridge. Stir gently before cooking. Cooked pancakes can also be made ahead and stored for easy reheating the next day.
Storage:
Store cooled pancakes in an airtight container in the fridge for up to 3 days, or freeze with parchment between each for up to 2 months. Reheat in the toaster, oven, or microwave until warm.
