  • 2 Tbsp Sugar
  • 1 Tbsp Baking powder
  • 1/2 Tsp Salt
  • 1 3/4 Cups Milk
  • 2 Large eggs
  • 1/2 Cup Creamy peanut butter
  • 1/3 Cup Vegetable oil
  • 1 Tsp Vanilla extract
For the PB&J Topping:
  • 1/2 Cup Creamy peanut butter
  • 1/2 Cup Jelly or jam of your choice
  • Fresh fruit (optional for garnish)
  • Powdered sugar (optional, for dusting)

Equipment

  • Waffle Iron: To cook the waffles to a perfect golden crisp.
  • Mixing Bowls: One for the dry ingredients and one for the wet ingredients.
  • Whisk: To combine the ingredients smoothly.
  • Measuring Cups and Spoons: To accurately measure out the ingredients.
  • Spatula: For folding the batter and spreading peanut butter and jelly.
  • Microwave or Small Saucepan: To gently warm the peanut butter and jelly for easier spreading.
  • Non-Stick Spray or Brush: To lightly grease the waffle iron.
  • Serving Plates: To plate and serve your delicious waffles.

Method

  1. Prepare the Waffle Batter:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, combine the milk, eggs, peanut butter, vegetable oil, and vanilla extract. Whisk until smooth and well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  2. Cook the Waffles:
Preheat your waffle iron according to the manufacturer’s instructions.
Lightly grease the waffle iron with non-stick spray or a small amount of vegetable oil.
Pour the batter onto the preheated waffle iron, spreading it evenly. Cook according to your waffle iron’s instructions, usually about 4-5 minutes, or until the waffles are golden brown and crispy.
  3. Prepare the PB&J Topping:
While the waffles are cooking, gently warm the peanut butter in a microwave-safe bowl for about 20-30 seconds, or until it’s easily spreadable.
In a separate bowl, warm the jelly or jam until it’s slightly runny, making it easier to drizzle over the waffles.
  4. Assemble the Waffles:
Once the waffles are done, spread a layer of warm peanut butter over each waffle.
Drizzle the jelly or jam over the peanut butter layer.
For an extra touch, garnish with fresh fruit and a dusting of powdered sugar.
  5. Serve and Enjoy:
Serve the waffles immediately while they’re still warm. Pair them with a cold glass of milk or a hot cup of coffee for the perfect breakfast.
