For the Chicken Marinade:
- 2 lbs boneless skinless chicken thighs (or chicken breasts)
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 3 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon smoked paprika
- ½ teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Vegetables:
- 1 zucchini sliced into rounds
- 1 yellow squash sliced into rounds
- 1 red bell pepper cut into strips
- 1 small red onion sliced
- 1 cup cherry tomatoes halved
- ½ cup Kalamata olives pitted
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper

Step 1: Marinate the Chicken
In a large mixing bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, basil, paprika, cumin, salt, and black pepper.
Add the chicken thighs (or breasts) to the marinade, coating them well.
Cover and refrigerate for at least 30 minutes (or up to 8 hours) for deeper flavor.
