Instructions
Prepare the Sausage and Vegetables:Heat a large skillet over medium-high heat and add the olive oil.Once the oil is hot, add the sliced Cajun sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set it aside on a plate.
Sauté the Aromatics:In the same skillet, add the diced onion and bell peppers. Sauté for about 5 minutes until they start to soften.Add the minced garlic and cook for another minute until fragrant.
Cook the Rice:Add the rinsed rice to the skillet, stirring to coat it in the oil and vegetables.Pour in the chicken broth and diced tomatoes with their juice. Stir to combine.
Season and Simmer:Add the smoked paprika, dried thyme, dried oregano, cayenne pepper, black pepper, and salt to the skillet. Stir well to ensure the spices are evenly distributed.Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
