Equipment

Ingredients

  • 1 Lb Cajun sausage, sliced into 1/4-inch rounds
  • 1 Cup Long-grain white rice, rinsed
  • 1 Large onion, diced
  • 1 Red bell pepper, diced
  • 1 Green bell pepper, diced
  • 3 Cloves garlic, minced
  • 2 Cups Chicken broth
  • 1 Can diced tomatoes, undrained
  • 1 Tsp Smoked paprika
  • 1 Tsp Dried thyme
  • 1 Tsp Dried oregano
  • 1/2 Tsp Cayenne pepper (adjust to taste)
  • 1/2 Tsp Black pepper
  • 1/2 Tsp Salt
  • 2 Tbsp Olive oil
  • 2 Green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Sausage and Vegetables:
    Heat a large skillet over medium-high heat and add the olive oil.
    Once the oil is hot, add the sliced Cajun sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set it aside on a plate.
  • Sauté the Aromatics:
    In the same skillet, add the diced onion and bell peppers. Sauté for about 5 minutes until they start to soften.
    Add the minced garlic and cook for another minute until fragrant.
  • Cook the Rice:
    Add the rinsed rice to the skillet, stirring to coat it in the oil and vegetables.
    Pour in the chicken broth and diced tomatoes with their juice. Stir to combine.
  • Season and Simmer:
    Add the smoked paprika, dried thyme, dried oregano, cayenne pepper, black pepper, and salt to the skillet. Stir well to ensure the spices are evenly distributed.
    Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  • Combine and Serve:
    Once the rice is cooked, return the browned sausage to the skillet. Stir everything together and let it cook for an additional 5 minutes to allow the flavors to meld.
    Garnish with sliced green onions and fresh parsley before serving.
