Ingredients

  • 4 Medium zucchinis, halved lengthwise and seeds scooped out
  • 1 Lb Ground turkey or beef
  • 1 Cup Cooked quinoa
  • 1 Small onion, finely chopped
  • 2 Cloves garlic, minced
  • 1 Red bell pepper, diced
  • 1 Cup Marinara sauce
  • 1 Cup Shredded mozzarella cheese
  • 1/4 Cup Grated parmesan cheese
  • 1 Tsp Dried oregano
  • 1 Tsp Dried basil
  • Salt and pepper
  • Fresh parsley, chopped, for garnish

Instructions

  • Preheat your oven
    to 375°F (190°C). While it’s heating up, prepare your zucchinis by cutting them in half lengthwise and scooping out the seeds to create “boats.” Place them on a baking sheet, cut side up.
  • Cook the ground turkey
    in a large skillet over medium heat until it’s browned and cooked through. This should take about 5-7 minutes. Drain any excess fat.
  • Add the onion and garlic
    to the skillet. Cook for 2-3 minutes until they’re fragrant and the onion is translucent.
  • Stir in the bell pepper
    and cook for another 2 minutes until it starts to soften.
  • Mix in the cooked quinoa
    and marinara sauce. Season with oregano, basil, salt, and pepper. Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
  • Spoon the filling
    into each zucchini boat, packing it tightly and mounding it slightly.
  • Sprinkle the mozzarella cheese
    evenly over the stuffed zucchinis, followed by the Parmesan cheese.
  • Bake in the preheated oven
    for 20-25 minutes, or until the zucchinis are tender and the cheese is bubbly and golden brown.
  • Garnish with fresh parsley
    before serving for a pop of color and freshness.
