4Medium zucchinis, halved lengthwise and seeds scooped out
1LbGround turkey or beef
1CupCooked quinoa
1Small onion, finely chopped
2Cloves garlic, minced
1Red bell pepper, diced
1CupMarinara sauce
1CupShredded mozzarella cheese
1/4CupGrated parmesan cheese
1TspDried oregano
1TspDried basil
Salt and pepper
Fresh parsley, chopped, for garnish
Instructions
Preheat your ovento 375°F (190°C). While it’s heating up, prepare your zucchinis by cutting them in half lengthwise and scooping out the seeds to create “boats.” Place them on a baking sheet, cut side up.
Cook the ground turkeyin a large skillet over medium heat until it’s browned and cooked through. This should take about 5-7 minutes. Drain any excess fat.
Add the onion and garlicto the skillet. Cook for 2-3 minutes until they’re fragrant and the onion is translucent.
Stir in the bell pepperand cook for another 2 minutes until it starts to soften.
Mix in the cooked quinoaand marinara sauce. Season with oregano, basil, salt, and pepper. Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
Spoon the fillinginto each zucchini boat, packing it tightly and mounding it slightly.
