  • 1/4 Cup Chopped walnuts or pecans (optional for added crunch)

Instructions

  • Prep the Sweet Potato:
    Preheat your oven to 350°F (175°C). Pierce the sweet potato with a fork and bake for about 45 minutes, or until soft. Alternatively, you can microwave it for 5-7 minutes. Once cooked, peel and mash until smooth.
  • Mix the Wet Ingredients:
    In a large bowl, combine the mashed sweet potato, almond butter, maple syrup, and vanilla extract. Stir until the mixture is smooth and well combined.
  • Add the Dry Ingredients:
    Add cocoa powder, salt, and baking powder to the bowl. Stir until the dry ingredients are fully incorporated into the wet mixture. The batter should be thick and fudgy.
  • Fold in Chocolate and Nuts:
    If you're using chocolate chips and nuts, fold them into the batter gently. This step is optional, but the chocolate chips give extra indulgence, while the nuts add a satisfying crunch.
  • Bake the Brownies:
