Ingredients
  

For the Chicken Filling:

  • 1 Lb Boneless, skinless chicken breasts, diced
  • 1 Tbsp Olive oil
  • 1 Medium red bell pepper, finely chopped
  • 1 Medium yellow bell pepper, finely chopped
  • 1 Cup Fresh pineapple, diced
  • 1/4 Cup Red onion, finely
  • 2 Cloves garlic, minced
  • 1 Tbsp Soy sauce
  • 1 Tbsp Fish sauce
  • 1 Tbsp Honey
  • 1 Tbsp Lime juice
  • 1/2 Tsp Ground ginger
  • 1/4 Tsp Red pepper flakes (optional, for a bit of heat)
  • Salt and pepper, to taste

For the Lettuce Wraps:

  • 1 Head of butter lettuce or iceberg lettuce, leaves separated and washed
  • 1/4 Cup Fresh cilantro, chopped
  • 1/4 Cup Crushed peanuts (optional, for garnish)
  • Lime wedges, for serving

Instructions
 

  • Step 1: Prepare the Chicken Filling
    Heat olive oil in a large skillet over medium-high heat.
    Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
    Remove chicken from the skillet and set aside.
  • Step 2: Sauté the Vegetables
    In the same skillet, add red and yellow bell peppers, red onion, and garlic. Sauté for 3-4 minutes until the vegetables are tender.
    Stir in diced pineapple and cook for an additional 2 minutes.
  • Step 3: Combine and Season
    Return the cooked chicken to the skillet.
    Add soy sauce, fish sauce, honey, lime juice, ground ginger, and red pepper flakes. Stir well to combine.
    Cook for another 2-3 minutes, allowing the flavors to meld together.
    Season with salt and pepper to taste.
  • Step 4: Assemble the Lettuce Wraps
    Spoon the chicken filling into the center of each lettuce leaf.
    Garnish with fresh cilantro and crushed peanuts if desired.
    Serve with lime wedges on the side for an extra burst of freshness.
