Equipment

  • 1 Mixing Bowl – A large bowl for combining all the ingredients.
  • 1 Silicone Spatula or Wooden Spoon – For mixing the ingredients thoroughly.
  • 1 Cookie Scoop (Optional) – To portion out the bites evenly.
  • Measuring Cups and Spoons: For accurate ingredient measurements.
  • 1 Baking Sheet or Plate – To place the rolled bites before chilling.
  • Parchment Paper – To line the baking sheet and prevent sticking.
  • 1 Airtight Container – For storing the energy bites in the fridge or freezer.

Ingredients

  • 1 cup Rolled oats (use gluten-free oats if needed)
  • ½ cup Natural peanut butter (creamy or crunchy, your choice!)
  • cup Maple syrup (or agave syrup for a lighter flavor)
  • ¼ cup Ground flaxseed (adds fiber and omega-3s)
  • ¼ cup Vegan chocolate chips
  • 1 tsp Vanilla extract
  • Pinch of salt (optional but enhances the flavor)

Instructions

Step 1: Mix the Dry Ingredients

  • In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt (if using). Stir until evenly distributed.

Step 2: Add the Wet Ingredients

  • Pour in the peanut butter, maple syrup, and vanilla extract. Use a sturdy spoon or spatula to mix everything together. The mixture should be sticky and hold together well.

Step 3: Add the Chocolate Chips

  • Fold in the vegan chocolate chips, ensuring they are evenly dispersed throughout the mixture.

Step 4: Shape the Energy Bites

  • Using clean hands or a small cookie scoop, roll the mixture into bite-sized balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet or plate.

Step 5: Chill and Enjoy!

  • Refrigerate the energy bites for at least 30 minutes to firm up. Once set, they’re ready to enjoy! Store leftovers in an airtight container in the fridge.
